Recipe : Banana Bread

This recipe is courtesy of Nadine and uses olive oil in place of butter. Damn tasty!

  1. Preheat over to 160-180C.
  2. Sift flour and baking powder in a large bowl.
  3. Add sugar and cinnamon and mix to combine.
  4. Combined bananas and vanilla extract and add to the dry ingredients and combine.
  5. Add in eggs and olive oil to the mix and combine.
  6. Finally stir through dates (if wanted) and pour into bread pan for baking.
  7. Sprinkle with additional brown sugar and bake for 60 minutes (or until cooked).
  8. Remove from oven and cool on a cooling rack.
  9. EAT! Fantastic with honey and ricotta, a spot of butter or plain. Goes even better with coffee.
